The claim that Palomino is a neutral-flavor grape is proven wrong with El Muelle – a wine with citrussy and tropical fruit flavors, lively chalky minerality, and a touch of herbal tanginess from its short contact with flor. Perhaps Palomino’s reputation could be re-evaluated if more growers in the region were trying as hard as Willy Peréz. Luckily, there’s a growing movement to rescue Vino de Pasto from the history books and re-enshrine it back into the DO.

    The 2022 Palomino El Muelle de Olaso is sourced from the renowned El Corregidor Estate in Jerez. It underwent 80% fermentation in stainless steel tanks, while the remaining 20% was rapidly sun-dried and fermented in sherry casks. It then spent up to six months in barrels. Displaying a pale yellow hue, the manzanilla-like nose reveals herbal and nutty notes. Dry and chalky on the palate, the taut and refreshing mouthfeel lingers with a bakery flavor. Delightful.

The grape responsible for dry Sherry, Palomino also makes a refreshing dry white wine with a light body and low acidity. Still white Palomino wine shows qualities of apple, peach and saline while dry Sherries express almond, baking dough and fresh herb aromas and flavors. Palomino shows high yields even when grown in warm, arid conditions. This quality, combined with its relatively low acidity, make it the perfect grape for Sherry production.

Sherry is a mere English corruption of the term Jerez, while in French, Jerez is written, Xérès. Manzanilla is the freshest style of sherry, naturally derived from the seaside town of Sanlúcar de Barrameda.
