Winemaker Notes

A deep tawny in color with a distinctive yellow-green edge indicating extended wood maturation. The aroma is multi-layered with intense raisin fruits, fruitcake, anise, roasted nuts and caramelized toffee, all seamlessly wound together. The palate is richly flavored, sweet, round and luscious, revealing dried fruits and caramelized toffee with a persistent lingering finish.

Drink now, served alongside a rich chocolate lava cake or salted caramel slice.

    Fortified wines have an important place in Yalumba's history. Their three barrel-age Tawnies are beautiful time capsules of a bygone era. The youngest, an average of 21 years old, is the color of an autumn sunset. It's reminiscent of fall on the nose as well: crisp leaves on a forest floor; shriveled apricots still on the tree; a whiff of campfire smoke in the distance; freshly shelled walnuts; and an underlying toffee and burnt sugar character. It coats the mouth lusciously, but its richness is lifted by the alcohol and acidity, and it's begging to be sipped with spiced apple walnut cake.

    A blend of Barossa tawnies averaging 21 years of age, the NV Aged Tawny 21 Years Old is mostly red varieties, like Grenache and Mataro, but could contain others as well, including whites like Muscadelle. This is sweet and rich, full-bodied and imbued with scents and flavors of golden raisins but balanced by bright notes of orange peel and made complex through the inclusion of walnuts and a touch of rancio. This is the sort of wine that will live forever if properly stored, and even for several weeks after being opened.

Yalumba has developed strong relationships with leading grapevine programs from around the world and have exclusive access to certain new varietals in Australia. This gives the Yalumba viticulturists and winemakers the unique opportunity to evaluate and develop new or emerging varieties before they are sold.

Yalumba continually strives to reduce their impact on the environment, stay involved in the community, and make great wine with minimal intervention in the vineyard and in the winery. They are committed to sustainable practices, with the belief that the healthier and more biodiverse the vineyards are, the better the wines will be. Yalumba has been developing its own sustainable viticulture program since the mid-1990s, promoting the economic production of quality grapes. For every acre of vineyard Yalumba own, they have at least one acre of native vegetation. All Yalumba wines are crafted with wild yeast, are 100% vegan, and are made with the least intervention possible but with as much knowledge, confidence, and expertise as possible.

Port is a sweet, fortified wine with numerous styles: Ruby, Tawny, Vintage, Late Bottled Vintage (LBV), White, Colheita, and a few unusual others. It is blended from from the most important red grapes of the Douro Valley, based primarily on Touriga Nacional with over 80 other varieties approved for use. Most Ports are best served slightly chilled at around 55-65°F.

Historically and presently the most important wine-producing region of Australia, the Barossa Valley is set in the Barossa zone of South Australia, where more than half of the country’s wine is made. Because the climate is very hot and dry, vineyard managers work diligently to ensure grapes reach the perfect levels of phenolic ripeness.

The intense heat is ideal for plush, bold reds, particularly Shiraz on its own or Rhône Blends. Often Shiraz and Cabernet partner up for plump and powerful reds.

While much less prevalent, light-skinned varieties such as Riesling, Viognier or Semillon produce vibrant Barossa Valley whites.

Most of Australia’s largest wine producers are based here and Shiraz plantings date back as far as the 1850s or before. Many of them are dry farmed and bush trained, still offering less than one ton per acre of inky, intense, purple juice.
