Courage & Conviction Sherry Cask is an American Single Malt whisky distilled, matured, and bottled on-site at their distillery in Lovingston, Virginia. Aged a minimum of three years, this 100% malted barley whisky is matured in former Spanish Sherry casks.This whisky showcases its natural color and is not chill filtered. Courage & Conviction Sherry Cask is bottled in batches to highlight the nuance of each contributing barrel.On the nose, you’ll pick up scents of honeycomb, apricot, bright lemon, and sugared almonds. On the palate, a silky mouthfeel melds together flavors of hazelnut, soft leather, and toffee. The finish is a slow fade of soft caramel and baking spice.

Even amid the deeper complexity of the sherry cask influence, the tropicality comes through—lemon grove and Spanish melon, set against a backdrop of dried leaves, forest floor, and pine wood. Elegant and honeyed on the palate, with the sherry cask influence showing a winey note, banana flan, apricot, milk chocolate, orange tart, and vanilla cream. A long smooth finish brings forth baking spice, sugared lemon, banana, honeysuckle, caramel, and savory oak. Impressive.

Courage & Conviction, their American Single Malt whisky product, is currently being produced on-site using malted barley from the U.S. and water from Virginia’s Blue Ridge Mountains. Sherry, Cuvée and Bourbon casks are used to age this unique whisky. They expect to release this whisky in three to six years’ time from casking, with a target release date in 2020.
