Winemaker Notes

The 2019 To Kalon Cabernet is truly unlike any other To Kalon TOR has made in 20 years. This years wine includes the largest percentage of Cabernet Franc that they have ever had in a To Kalon and wow what that did! This years version has all of the depth and richness that you expect from a To Kalon Cabernet but with much more refined tannins and a slight rosewater, tobacco edge that is not normally there. In addition the lift and freshness that the addition of the Franc added makes this perhaps the most food friendly To Kalon they have ever made. As great as past To Kalons have been it is very hard to single this out as the best but in a few years TOR would not be surprised to see it there.

A vineyard that rarely holds things close to its vest, the 2019 Cabernet Sauvignon Beckstoffer To Kalon Vineyard just about jumps from the glass with its brilliant perfume of red, blue, and black fruits as well as flowery incense, Asian spices, tapenade, and iron-like aromas and flavors. One of the more structured, tannic wines in the lineup, it's medium to full-bodied, has a great mid-palate, and serious length on the finish. As with most 2019s, there's plenty of early appeal, yet smart money will give these 3-5 years.

For the first time, Tor's 2019 Cabernet Sauvignon Beckstoffer To Kalon includes a fair whack of Cabernet Franc (14%), which winemaker Jeff Ames co-fermented with a portion of the Cabernet Sauvignon. Perhaps that is the source of the wine's delicate herbal shadings, adding complexity and freshness to the black cherry and cassis fruit. Full-bodied, rich, velvety and long, this is really super stuff, with tea-like notes emerging on the finish and lingering silky-dusty tannins.

Blueberry, dark chocolate, sandalwood and cedar. Crushed stone, too. Full-bodied with depth of fruit and richness. The tannins are chewy and focused. A leaner yet rich palate that gives a special interpretation of To Kalon. Drink after 2024.

We make great wines simply because we love making them. Wine is irresistible, it is fun, and it is about sharing passion, good fortune and community. TOR exists today because of the relationships we’ve cultivated over decades with mentors, grapegrowers and friends. This is indisputable: Tor knows a great vineyard. Less is always more when it comes to bottling some of the best grapes on the planet. In the tussle between the will of nature and the winemaker – our work is staying out of the way.

One of the most prestigious wines of the world capable of great power and grace, Napa Valley Cabernet is a leading force in the world of fine, famous, collectible red wine. Today the Napa Valley and Cabernet Sauvignon are so intrinsically linked that it is difficult to discuss one without the other. But it wasn’t until the 1970s that this marriage came to light; sudden international recognition rained upon Napa with the victory of the Stag’s Leap Wine Cellars 1973 Cabernet Sauvignon in the 1976 Judgement of Paris.

Cabernet Sauvignon undoubtedly dominates Napa Valley today, covering half of the land under vine, commanding the highest prices per ton and earning the most critical acclaim. Cabernet Sauvignon’s structure, acidity, capacity to thrive in multiple environs and ability to express nuances of vintage make it perfect for Napa Valley where incredible soil and geographical diversity are found and the climate is perfect for grape growing. Within the Napa Valley lie many smaller sub-AVAs that express specific characteristics based on situation, slope and soil—as a perfect example, Rutherford’s famous dust or Stags Leap District's tart cherry flavors.
