This Saint-Bris has a golden color with light green highlights. Its powerful nose is characterized by aromas of exotic fruits, freshly cut grass and citrus fruits such as grapefruit. This wine has a good structure with an aromatic fruit and vegetable persistence. Produced from vines with an average age of 25 years old and aged in stainless steel tanks for 6-8 months. Best drunk young, as an aperitif or with fruit-based desserts.

COMMENTARY: The 2020 Simmonet - Febve Saint-Bris Sauvignon is an excellent expression of Sauvignon Blanc. TASTING NOTES: This wine shines with aromas and flavors of chalk, stone fruits, mineral notes, and peach fuzz. Try it with a dozen raw oysters topped with freshly squeezed Meyer lemon. The Maison and Domaine of Simonnet-Febvre were founded in 1840 by Jean Febvre, a barrel maker by trade from Montbard. In the early days, the house was known for its sparkling Chardonnays from Chablis, known today as Crémant de Bourgogne. Over the years, the Febvres acquired holdings in some of the greatest terroirs in Chablis. Today, the Domaine comprises approximately 9 acres, crowned by a 2/3-acre plot in the Grand Cru vineyard of Les Preuses, with 3.5 acres of Premier Cru Mont de Milieu and 4.7 acres of communal Chablis vineyards. Maison Louis Latour acquired Simonnet-Febvre in 2003. Since its purchase, the Latours have entirely renovated the winemaking facilities, installing new stainless steel tanks and pneumatic presses. The vineyards have been reworked with the same sustainable vineyard practices utilized in Latour's 125-acre domain in the Côte d'Or. Maison Louis Latour also hired a talented new winemaker, Jean-Philippe Archambaud.
Capable of a vast array of styles, Sauvignon Blanc is a crisp, refreshing variety that equally reflects both terroir and varietal character. Though it can vary depending on where it is grown, a couple of commonalities always exist—namely, zesty acidity and intense aromatics. This variety is of French provenance. Somm Secret—Along with Cabernet Franc, Sauvignon Blanc is a proud parent of Cabernet Sauvignon. That green bell pepper aroma that all three varieties share is no coincidence—it comes from a high concentration of pyrazines (herbaceous aromatic compounds) inherent to each member of the family.
A tiny, solitary white producing appellation west of Chablis but east of the Loire, St. Bris is a bit of a peculiarity as it is technically part of Burgundy but produces non-Burgundian grapes. St-Bris produces highly aromatic whites with qualities of grapefruit, mandarin, peach, lychee, salinity and spice from both Sauvignons: Gris and Blanc. St-Bris wine is wonderful with shellfish, goat cheese and spicy curries.
