Winemaker Notes
Dark brambly forest fruits intertwined with raw coffee beans, like a trek to the depths of the Balinese mountains. Notes of fresh curry leaves, pine resin, and balsamic notes hint to whole bunches used in the fermentation and completed by a feather-light touch of delicate French oak. Shiraz and Grenache together make for such a dynamic blend and decadent mouthfeel. Shiraz bringing the mid palate weight and intensity of fruit flavors, while the spicy saffron liveliness of Grenache pulls everything together for a party on your palate. The finish is just like ending your night with smooth electric beats.
Pair with slow roasted baby back ribs or lentil shepherd's pie.

Paxton is a family-owned wine company in McLaren Vale, Australia, and a leader in both organic and biodynamic viticulture and winemaking. Established in 1979, Paxton was founded by David Paxton who has built a reputation as one of Australia’s most highly respected viticulturalists by managing and growing wine grapes of exceptional quality for over 30 years. Today, under the direction and guidance of consultant winemaker Kate Goodman and winemaker Ashleigh Seymour, Paxton produces an approachable collection of estate grown wines that showcase McLaren Vale's exceptional fruit quality, natural diversity, and varietal expression.
Paxton was one of the first pioneers of biodynamic farming in Australia, and today all Paxton's vineyards are 100% Paxton owned and managed. The wines are crafted with organic grapes, certified biodynamic, and vegan friendly. In the winery, minimal winemaking intervention ensures the integrity of the fruit from vineyard to bottle. Paxton's core biodynamic belief is founded in soil health. The vines are cared for without the use of synthetic fertilizers nor pesticides, with a focus on promoting healthy, living soils using natural compost preparations. Through this process they can give back to the environment and nurture it for future generations. Paxton's philosophy is that when vines live in truly healthy, chemical free soils, in ecologically sound environments, they will produce the best quality grapes, and therefore the highest quality wines.
With bold fruit flavors and accents of sweet spice, Grenache, Syrah and Mourvèdre form the base of the classic Rhône Red Blend, while Carignan, Cinsault and Counoise often come in to play. Though they originated from France’s southern Rhône Valley, with some creative interpretation, Rhône blends have also become popular in other countries. Somm Secret—Putting their own local spin on the Rhône Red Blend, those from Priorat often include Merlot and Cabernet Sauvignon. In California, it is not uncommon to see Petite Sirah make an appearance.
Known for opulent red wines with intense power and concentration, McLaren Vale is home to perhaps the most “classic” style of Australian Shiraz. Vinified on its own or in Rhône Blends, these hot-climate wines are deeply colored and high in extract with signature hints of dark chocolate and licorice. Cabernet Sauvignon is also produced in a similar style.
Whites, often made from Chardonnay or Sauvignon Blanc tend to be opulent and full of tropical, stone and citrus fruit.
