Winemaker Notes
Luscious black cherry foam, with a sprinkling of coffee grounds all while being laced with a touch of dried herbs. Ripe, juicy blackberry and graphite fill in nicely with a stroke of Dulce de Leche leading into roasted walnut husks and vanilla bean whipped cream.
Pair this wine with Serbian whole roasted rotisserie lamb.

Fruit sourced from three vineyards in three Paso Robles sub-districts El Pomar Estrella, and Willow Creek contribute dimension and breadth to this opulent red. Refined tannins, bright acidity, and elegance are exemplified by the region's top producers and Opolo is surely one of them. Power and structure commune with ripe blackberry, licorice, tilled soil, and an underlying creaminess.

Robert Parker's Wine Advocate
Deep ruby, the 2019 Cabernet Sauvignon features graphite-laced black cherries with touches of aniseed and sweet spice. The medium-bodied palate is grainy and fresh with restrained flavors and a long, baking spice-laced finish. It's a bold, ripe, oak-driven style that will offer enjoyment over the next 3-5 years.

Black cherry and black plum aromas are cut by dark incense and savory mushroom on the nose of this bottling. There's a toasted mahogany spice to the palate, where dark cherry, soy and more mushroom flavors also arise.

1999 marked the first commercial crush under the Opolo label, when Quinn and Nichols produced Merlot, Syrah, Cabernet Sauvignon, Sangiovese, Zinfandel, and Muscat Canelli. Quinn and Nichols have essentially taken over the viticulture and winemaking duties, not an easy task considering they both still have their "day jobs." Quinn used to own one of the largest Century 21 brokerages in the country and Nichols runs his own wireless electronics firm.
