This wine is complex and should be opened or decanted one to three hours beforedrinking to develop the subtle hints of violet that can be detected among the blueberry and stewed blackcurrant notes. It then softens without losing anyof its assertive character.

Beautifully integrated and approachable now, though the intensity and slight grip from the tannins suggest that you could wait another year or two. Best from 2020 through 2028.

    From old vines, the 2015 St Nicolas de Bourgueil Vieilles Vigne Le Clos des Quarterons offers a very clear, pure and fresh bouquet of dark kirsch. It is a full-bodied, complex and intense Cabernet with a silky, refined and transparent texture and good tension and grip on the aromatic finish. Lots of cherry flavors in the aftertaste. The wine was aged for 15 months in 500-liter barrels, of which 15% were new.

Located in Saint-Nicolas-de-Bourgueil in the Loire Valley, Domaine Amirault's Clos des Quarterons is a 92-acre vineyard that is farmed according to the precepts of biodynamic viticulture. The domaine has been in the Amirault family for six generations and is currently managed by Xavier Amirault and his wife, Agnès. The estate is 100% certified organic by Ecocert and certified biodynamic by Demeter. The biodynamic methods focus on both the environment and the terroir: soil, place, climate, varietal, and the methods of farming. The goal is to achieve a natural balance across the 53 plots of mostly Cabernet Franc and Chenin Blanc planted at the estate. This is the domaine's secret to offering unique and living wines, vintage after vintage.

An important red wine appellation in the Touraine district of the Loire, Chinon produces fanciful, light-bodied reds from the Cabernet Franc grape. Chinon also makes charming rosés from the same grape as well as white wines from Chenin blanc. But the reds give the area its fame. Often scented with fresh herbs, black tea and violets, Chinon reds show a lovely combination of fruit and acidity. However, styles have become more concentrated and ripe in recent years from improvements in vineyard management. Modern methods include planting grass between vineyard rows, using higher trellises and deleafing to increase sunlight to berries and therefore improve ripening. Even still, red Chinon is intended to be a light to medium bodied, refreshing wine to be enjoyed in its youth.

Fuller-bodied Chinons come from vineyard sites on the clay and tuffeau limestone slopes, usually from the southern exposed slopes of Cravant-les-Coteaux, and the plateau above Beaumont. Lighter styled wines come from the sand and gravel vineyards near the Loire or Vienne Rivers with the most refined examples coming from the area around Panzoult
