    This 100% Pedro Ximenez comes from a single vineyard in the Limari Valley. Fresh apricot, banana,honeydew melon, and white flowers jump out on the nose. The bright acidity and medium body lead to notes of red apple skins, tangerines, and canned peaches with hints of coriander, cucumber, and mint. Delicious by itself or with anything slightly spicy!!

    Colectivo Mutante is a small project formed by Diego Edwards and Cedric Nicolle in 2016. They work with a grower from the Limari valley that farms and sells Pedro Ximenez grapes for Pisco production. Diego and Cedric thought that a particular 1 hectare parcel had potential for making high quality wine because of it's calcareous soil and proximity to the coast, so they decided to try their hand at making dry, still PX. Some of Chile’s most highly regarded Pedro Ximenez comes from the north where the arid desert is situated next to the Pacific Ocean. They currently make about 500 cases a year, and this small project is primarily motivated by passion for and enjoyment in life.

    The grape with the coolest name and some of the greatest fame in the wine-growing world, Pedro Ximénez is responsible for a handful of radically different wine styles. A white variety grown in Andalucia, Spain, it is primarily used in the production of sweet, late harvest Sherry as well as for crisp, dry whites. Somm Secret—It is also grown in New South Wales, Australia to produce the rich and golden McWilliam’s Pedro Sauterne and in Chile for Pisco production as well as a lovely varietal dry white from the Elqui Valley.

    Part of the Coquimbo region and a key location for pisco production, the Limari Valley is one of the northern most wine producing regions of Chile. The other two, also part of Coquimbo, are the Elqui and less-developed Choapa Valleys. While more vineyard area is dedicated to pisco production (via the grapes of Muscat of Alexandria, Pedro Jimenez, Moscatel de Asturia and Torontel), the acreage under vine for still wine production has increased. The intense sunlight in the Limari Valley, coupled with little rainfall as well as the cooling effect of the Humboldt Current from the Pacifc Ocean, all make the area ideal for cool climate grapes like Chardonnay and Pinot noir.
