This wine has the aromas of mineral /slate with lemon and orange citrus and a distinct floral thread. Lime and lemon interwoven offers a juicy taste of mineral on the palate. It is fresh, mouth-filling along with a lingering apple peel and white blossoms as well as fleshy and textured. The best pairing for this wine is with BBQ’d prosciutto wrapped scallops drizzled with mandarin infuse olive oil.

Struck flint and cut grass accent ripe notes of fig, stone fruit and melon in the medium-bodied 2017 Headwaters Organic Sauvignon Blanc. It's not as rich as Babich's Cowslip Valley bottling, but it's qualitatively its equal, replacing that richness with a cool, wet-stone sensation and equivalent length on the finish.
