Perfect ripeness balanced with a notable acidity makes Aligoté a unique white wine grape in Burgundy. Unfortunately Aligoté often ends up unfairly lost in Chardonnay’s shadow—though not always! It does have its very own appellation in the quaint village named Bouzeron, just south of the Côte de Beaune, in Côte Chalonnaise. Some of the world’s very best come from here. Vignerons in the New World experiment with the grape but it is also widely cultivated in the Eastern European countries of Romania, Burlgaria, Ukraine, and Moldova.
